Additionally, when fragmented by pepsin, a digestive enzyme in humans, the resulting protein fragments of beta-lactoglobulin has been shown to elicit antimicrobial activity against a number of pathogenic bacteria including Escherichia coli (3).

The bioactive compound, alpha-lactalbumin also elicits antimicrobial and antihypertensive functions similar to that of beta-lactoglobulin. In contrast to beta-lactoglobulin, digestion with chemotrypsin instead of pepsin releases peptides from alpha-lactalbumin that are known to have antimicrobial properties, particularly against E. coli (4). However, similarly to beta-lactoglobulin, hydrolysis of alpha-lactalbumin releases peptides that also inhibit ACE lending additional function as a blood pressure-regulating bioactive compound (4).

Glycomacropeptide also displays some interesting bioactive properties. For instance, it has been shown to bind enterotoxin produced by pathogenic strains Vibrio cholerae and E. coli (5). Bifidobacteria have also been shown to have a positive effect on the immune system by stimulating the activity of immune cells, the exact mechanisms by which this occurs in humans however, are poorly understood (10).

Inulin is not limited in its functional food status to solely enhancing the population of beneficial gut microflora. It has also been shown to enhance regularity (11), and mediate the absorption of some minerals such as calcium (7, 12).
