Kale & Lentil Soup

Kale and Lentil Soup


  • 2 tbsp Olive Oil
  • 1 Onion, diced
  • 4 Garlic Cloves, minced
  • ½ cup Cilantro, chopped
  • ½ cup Parsley, chopped
  • 18-20 Kale leaves, chopped
  • 2 cups semi-cooked Lentils
  • 2 large Carrots, chopped
  • 3 Celery stalks, chopped
  • 2 tsp Black Pepper
  • ½ cup Lemon Juice
  • 1 tsp Cinnamon
  • 2 L of water
  • Sate to taste


  1. Sauté onions in oil until tender.
  2. Add garlic and sauté for half a minute.
  3. Add kale and cover pot.  Let it cook for 5-7 minutes on medium to low heat.
  4. Add carrots, celery, water, lentils, spices, salt and let the soup cook for 30 minutes on medium heat.
  5. Add cilantro and parsley at the 25 minute mark.
  6. When complete, add lemon juice.
