Ingredients
- 2 tbsp Olive Oil
- 1 Onion, diced
- 4 Garlic Cloves, minced
- ½ cup Cilantro, chopped
- ½ cup Parsley, chopped
- 18-20 Kale leaves, chopped
- 2 cups semi-cooked Lentils
- 2 large Carrots, chopped
- 3 Celery stalks, chopped
- 2 tsp Black Pepper
- ½ cup Lemon Juice
- 1 tsp Cinnamon
- 2 L of water
- Sate to taste
Preparation
- Sauté onions in oil until tender.
- Add garlic and sauté for half a minute.
- Add kale and cover pot. Let it cook for 5-7 minutes on medium to low heat.
- Add carrots, celery, water, lentils, spices, salt and let the soup cook for 30 minutes on medium heat.
- Add cilantro and parsley at the 25 minute mark.
- When complete, add lemon juice.
